Stars Wars can count, but it has to be 1-3, 4-6 or 6-9. Hell, even Indiana Jones (you can forget about IV, which wasn't even that bad, imho).
I'm tempted to go with Back to the Future, as those movies are just so much fun.
But for me, there is no real other choice than The Godfather trilogy. I and II are two of the greatest movies ever made and III is excellent too, if not quite as great.
Here is a good list.

Really can't go wrong with The Lord of the Rings (not the Hobbit!) trilogy. Epic & well done. Even if Peter Jackson did ignore the burning of the Shire.

Objectively: The Godfather trilogy. Even if part 3 is weaker (Sofia, stick to directing, tyvm)
Subjectively: The Lord of the Rings trilogy. Although an argument could be made that it's really a 10+ hours long movie with too many endings.

Star Wars OT is *the* trilogy sk let's get that out of the way... Pretty deserving. Definitely good, iconic.... Probably the best. It's the first thing that comes to my mind when the idea of a trilogy comes up, and it's the reason so many fantasy and sci fi franchises since have attempted to emulate that three movie structure
The Dollars Trilogy: all of those are great.
Guillermo Del Toro's "Trilogy" not a trilogy in the linear story sense but referred to as such because of thematic overlap: Kronos, The Devil's Backbone, Pans Labyrinth. These are all great movies.
Also, this may be incindiery, but the Lord of the rings movies kind of suck. The books are great, maybe someday they will get a do over. I just rewatched those.

i used to love 3 but rewatching it a couple times recently as an adult it does not hold up as a "good film" the way the other three do. so maybe i'm breaking the rules a little but if you watch 1, 2, & 4, you still have a cohesive through-line that's relatively unaffected by the events of 3.

Can't retweet this enough -- 4 and 5 just suck -- only redeeming quality of 4 is Timothy Olyphant who is a fun actor to watch on-screen. re-watched 3 (with a Vengeance) and John McTiernan brought something exciting to the movies
